This stunning bresaola is a perfect example of a deeply flavoured whole muscle charcuterie made with old dairy cow by Dhruv & Tom at Tempus, one of our star products for 2019.
Tom & Dhruv use 15 year old cow’s to create this stunning product, deep rich flavours with bursts of umami, a truly great product.
Both masterchef allumni have worked hard to create some of the best British Charcuterie on the market and this is just one example.
