The addition of fragrant pink peppercorns to this Cornish Charcuterie salami adds a new dimension of warmth and aroma without the heat that is associated with black pepper.
This traditional salami is made to an Italian recipe, from home-reared Cornish Lop pork. Matured slowly with a light Beech smoke.
