Diana Smart took up cheese making at the tender age of 61 and produces many traditional Gloucester cheeses, including this fantastic Double Gloucester, on the family farm. Smarts Double Gloucester remains one of the few still made the traditional way and is one of the best examples of this age old cheese available. Made using unpasteurised full cream milk from both the morning and evening milkings of her herd of 66 dairy cows, it is then coloured with the natural vegetable dye, Annatto, to give it its familier light orange hue then put into traditional molds and matured for 6 months. The end result is a rich and mellow cheese with earthy, almost smokey notes and a crumbly texture.
