Lord of The Hundreds is one of the finest British Ewe's Milk Cheese's in production, made by the Clint at the Traditional Cheese Dairy in Stonegate, Sussex. Unpasteurised milk from Friesland ewe's is used to create this brilliant modern cheese that is hand ladled into baskets and left unpressed resulting in a wonderful open texture and a distinctive 'pave' like appearance. The end result is a complex cheese with flavours of burnt caramel and hazelnuts balanced by grassy notes, there is a slighlty grainy texture with the occasional crystaline crunch. Its complex flavours and texture make it a wonderful alternative to parmesan or peccorino. The cheese takes it's name from the Saxon era, the lord was the tax collector who controlled a 100 parcels of land, there is a monument to this practice at the Traditional Cheese Dairy farm
